The extra virgin olive oil from the Canino cooperative social oil mill is produced by pressing olives harvested manually from the olive groves of our Cooperative’s members only and processed within 24 hours. The oil has very low acidity and is rich in polyphenols (antioxidants) which help preserve its organoleptic properties over time. It has a clear-bright color, or opaque if not filtered, an emerald green color with golden reflections, more intense when freshly produced, and a strong flavor with a fruity aroma and a bitter and spicy aftertaste.
